Holiday Teal

Teal are a fairly small duck, so there is not a lot of meat on the breast, but what is there is very tasty if cooked correctly, and can be sliced off the breast and served as a delicious appetizer over the Holiday season! Here is how a prepared mine this year.

First, I take the whole breast out of the Teal.  Some like to cut the breast meat from the bone, but I feel as though you waste some of the meat that way, and with a teal, there is not much extra.  Plus I think they are easier to cook as a full breast vs filets.

Ingredients:

  1. 6 Teal Breasts

  2. 1 pack of Bacon

  3. 2 Apples

  4. 1 Orange

  5. 1 Bottle of Italian Dressing

  6. Gartners all natural special blend spice ( or spice of your choice )

Step One:  Slice the apples into medium size slices.  I use an apple slicer for this

Step Two:  Peal one orange

Step 3:  Place an apple slice under the breast and wrap with a slice of bacon.

Step Four:   Repeat step 3 with all the breasts

Step 5: Place all the breasts in a baking dish, and fill all open areas with remaining apple slices.

Step 6:  Break apart the orange and squeeze the juice over the breasts, then place the squeezed out orange slices throughout the baking dish.

Step 7:  Cover all with Italian dressing

Step :  Sprinkle Gartners special blend spice over each breast 

Step 9:  Cover with foil and cook in oven at 325 for about 40 Minutes

Step 10:  Remove foil, turn oven up to 375 and cook an additional 10 - 15 minutes

Step 11:  Remove from oven, remove bacon ( Usually does not cook all the way through so you should not eat it ) 

Step12:  Slice and serve up as an appetizer
