SALMON, SHRIMP AND SCALLOPS

My wife and her girlfriends were having a girls get together on Saturday night and and I volunteered to cook for them. A friend of mine had told me about how they grill salmon, shrimp and scallops all together and it sounded amazing so I decided to give it a try for this event. It turned out fantastic, although I think I over cooked it a bit. Here is how I cooked it:

1: Peal and clean jumbo shrimp and scallops.

2: Melt butter, garlic, salt, pepper and white wine in a pan

3: build a tray out of aluminum foil slightly bigger than your salmon fillet.

4: Place the fillet in the aluminum tray and add shrimp and scallops on top and on the sides of the salmon fillet.

5: Brush a generous amount of the the butter/wine/garlic mixture over the salmon and scallops, then sprinkle the top with parsley.

6: Wrap aluminum foil over the top of each tray so the fillet is covered completely, and poke a few holes in the top of each.

7: Place on grill at 250 - 300 and cook for 15 - 20 minutes or so. ( I was concerned about under cooking the scallops so I left it on the grill longer than I usually would, but I slightly over cooked the scallops so use your best judgement on time and temp for your grill)

8: Open and serve with rice and salad
