Camp Style Hash Browns

Next time you cook some baked potatoes, whether camping or at home, bake a couple of extra potatoes and use them for awesome, easy to make hash browns the next morning!

Here is how I prepare my baked potatoes


First, clean your potatoes throughly and then coat with olive oil and seasonings of you choice. I like either Johnnys or just salt and pepper. Wrap in aluminum foil and cook in the oven, grill or camp fire. You will know they are done when you can easily poke a fork through the potato. Eat want you want that night, but save a couple for the next morning. Put the extra baked potatoes in a zip lock bag and store them in the refrigerator or cooler until morning.

Here is how I make my Camp Hash Browns

Baked potatoes from the night before, plus simple ingredients make for great hash browns!

Ingredients:

Two or Three Baked Potatoes cooked the night before

1 Red Bell Pepper

1 Green Bell Pepper

2 Sweet onions

1 bunch green onion

Butter

Avocado Oil ( or olive oil )

Johnnys Seasonings

You can add any other ingredients you like such as mushrooms, bacon or cheese…it's hard to mess this up!


1. Cut up your potatoes. I like to cut them into thick slices and then quarter the slices.

Slice and quarter potatoes into good size pieces.

2. Cut up all your other ingredients into thick chunks


3. Add some Johnny’s seasoning over all the ingredients.

Get all your ingredients cut and ready to cook

Cooking

Melt 1/2 a stick of butter In a large cast iron skillet, Once it has melted add some Avocado oil or olive oil to the butter.

Melt some butter and add Avocado or Olive oil

When the oil butter mix is good and hot, add the potatoes and let them cook for 5 to 10 minutes.

Cook potatoes for 5 or 10 minutes before adding the rest of the veggies.

Next add in all your veggies and let the whole mixture cook for about 20 minutes. Turn and stir everything often until it is all cooked.

Serve with a couple fried eggs for an amazing breakfast at the camp site or in your kitchen!
