Dungeness Crab Pasta Primavera is a delicious, healthy and beautiful way to enjoy your fresh caught crab.
To achieve the best rendition of this recipe, start by catching some Dungeness Crab. I recently had the opportunity go fishing and crabbing in Pacific City, Oregon, where I caught a limit big, beautiful Dungeness Crabs specifically for this dish.
After catching and cooking your crab, you are all set to begin following the recipe.
Ingredients:
3 Dungeness Crabs, meat extracted
Pasta: Penne Pasta
Fresh Vegetables: Red Onion, broccoli, yellow squash, asparagus, mushrooms, carrots, red and yellow peppers, zucchini, and tomatoes
Sauce: cream, lemon, chicken broth, red pepper flakes, garlic, and butter
Parmesan cheese
Cook pasta, drain and set aside.
2. Clean the crabs and set the meat aside.
3. Prepare the vegetables by cleaning and cutting them, then mix with olive oil, salt, and pepper before setting them aside.
4. Roast the vegetables for about 30 minutes at 450 degrees Fahrenheit.
5. Sauce preparation: In a saucepan, melt 4 tablespoons of butter. Incorporate 4 garlic cloves, red pepper flakes to your liking, 1.5 cups of chicken broth, 1.5 cups of heavy cream, lemon zest, and the juice of 1 lemon. Bring to a boil, then reduce heat and simmer for 5 minutes.
6. Combine roasted vegetables, pasta, parmesan cheese, and sauce in a large bowl.
7. Serve the pasta/veggie mix in a bowl or on a plate and garnish with fresh crab.
Enjoy!
