The pink ones are the Opakapaka

Here is the recipe we used to make them

First Make The Toppings

Mix the following ingredients in a bowl .

1 Cup Sour Cream

2 Tablespoons Mayo

1 Clove Garlic Minced

1 cup fresh cilantro

2 Serrano Peppers Minced( remove the seeds first )

1/2 Teaspoon sugar

Salt to taste

Squeeze in 1 lime

Pour over 1 bag of shredded cabbage and toss

Second, Make The Sauce

Mix Mayo and Sriracha sauce to taste

Third Cook The Fish

Cut fish into taco size strips.

Pour Fish Fry mix into a 1 gallon zip lock bag. We used McCormick Fish Fry Mix.

Crack a couple of eggs in a bowl and mix them up with a little milk

Dip the fish pieces in the egg/milk mixture and then place them in the bag of fish fry mix and shake till they are completely coated with the mix

In a large Skillet , heat up some avocado or canola oil.

When the oil is hot, take the strips of fish out of the bag and cook in the oil until done.

Opakapaka Tacos

Once the fish is cooked and the toppings are ready, brown your flour tortillas in a frying pan.

When the tortilla is done, remove from the pan and add your fish, toppings and sauce.
