One of my favorite fall dinner recipes is fresh caught Pacific NW Salmon paired with Acorn squash. Here is how I make it.
1: Cut your Acorn squash in half and remove the seeds
2: Preheat oven to 400 degrees
3: Mix 2 to 3 table spoons each of butter, brown sugar and maple syrup into a bowl.
4: Heat up the bowl of brown sugar, butter and syrup in the microwave for one minute or until liquified. Mix together and pour evenly into the two halves
5: Cook for one hour, or until soft.
6: While your acorn squash is in the oven, prepare your salmon and put on the grill.
For this recipe I seasoned my salmon with some truffle salt, ground pepper, fresh squeezed lime, Sweet Walla Walla Onion, Dill Weed and butter.
Pair this meal with a cold Alaskan Amber and serve with a green salad for a uniquely Pacific NW fall dinner.
