Got a mess of Crappie? Try making some Baja Crappie Tacos for your next dinner, it's a great way to add some variety to your catch and they taste incredible!
Start with making the Baja Taco Sauce:
3/4 cup sour cream
1/2 cup mayo
3 tablespoons of lime juce
1 Avocado
1 teaspoon garlic powder
2 teaspoons Srriracha Sauce
1/3 cup minced cilantro
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon ground cumin
1/4 teaspoon ceyene pepper
11/2 teaspoons adobo sauce
Baja Taco Sauce ingredients
Mix all together and add mayo as needed to get the consistency you want.
Baja Taco Sauce!
Prepare your Crappie Fillets
Clean and dry your fillets
Fill a 1 gallon Zip Lock bag with 1 bag of "Pride of the West" all purpose batter mix
*Crack two eggs into a bowl and mix with regular milk or almond milk
*Soak your crappie fillets in the egg/milk wash
*Remove the fillets and drop into Zip Lock bag with batter mix
*Shake the bag until all the fillets are evenly coated
*Remove Crappie fillets and place on a cookie sheet
*Repeat process until all the fillets are coated.
Season fillets with Tony Chachere's Creole seasonings
( I also season some with "Slap YA Mama" seasonings)
Fill a cast iron skillet about 1/4" with Acacado oil -
It's better for you and won't burn.
Heat the oil and cook the fillets until golden brown.
Set up a taco bar with the
Crappie fillets, shreddded cabbage, tortillas + Baja sauce and Enjoy!!!!
